Road’s End Cooler
My parent’s restaurant, The Road’s End Restaurant and Bar, was famous
for its house drink, the Road’s End Cooler, nicknamed The Green Thing.
They sold about 9,000 drinks each season. It was created by my
brother-in-law, Steve Galloway, and my father, Walt Johnson. Later
the drink was served at our Copper Mine Restaurant.
2 1/2 ounces of Midori®
1 1/2 ounces of light rum
Pineapple juice
Grapefruit juice (not pink)
Pineapple wedge
Maraschino cherry
Begin with a
22 ounce brandy snifter. Pack it with ice. And I mean pack it! One of
the tricks to making it correctly is over packing the glass with ice.
The second
trick is to layer each ingredient. Add each in the following order:
Begin with Midori®, followed by the rum, then add pineapple juice, fill
to about 1/2" from the brim of the glass. Top the drink with grapefruit
juice. Garnish your drink with a wedge of fresh pineapple and a
maraschino cherry.
